It Started at 16

Our founder started working in restaurants at 16 years old — clearing tables, washing dishes, learning the rhythms of a working kitchen. What started as a after-school job became a lifelong career and a genuine passion for one of the hardest and most rewarding industries in the world.

Over the next several decades he worked every position a restaurant has to offer. Busboy. Dishwasher. Server. Bartender. Chef. General Manager. Owner. He didn't study the restaurant industry from a classroom or a consulting textbook — he lived it, from the first table turn of a Friday dinner service to the last call at a packed bar at midnight.

He became the top server in every room he worked in. He learned how menus are engineered to sell, how cocktail programs are built to drive revenue, how kitchens are run to produce consistent food at controlled cost. He hired people, trained people, and when necessary, let people go. He built teams, wrote manuals, and created the systems that keep a restaurant running smoothly when the owner isn't in the room.

And then he owned a restaurant. He knows what it feels like to sign the lease, hire the staff, open the doors, and lie awake at night wondering if this month's food cost is going to eat the profit. He also knows what it feels like to turn things around — and to eventually sell a restaurant that works.

After decades in the industry, one thing became clear: most struggling restaurants aren't failing because of bad food or bad ideas.
